BREWERY - TAP In 1817, Johann Peter Wallenborn established a brewery for top-fermented beer in Bitburg in front of the Schakentor: the Bitburger Brewery. In 1842 his daughter Elisabeth married Ludwig Bertrand Simon of Kyllburg. Together they established the brewery pub “Zum Simonbräu” in their home – the family residence – which Elisabeth continued to run after the premature death of her husband. In 1906, the Simon family decided to expand the brewery pub by adding the “Simonbräu Hall”, which was completely destroyed in 1944. After rebuilding, the popular pub reopened in the late 1940s. Numerous rebuilding and modernizing projects followed, and today, the brewery pub “Zum Simonbräu” is a top address in Bitburg.
